Fit Recipe: Robyn’s Pizza Omelet!

I love incredible food! As a busy, full-time-working mom of three, however, I have little time to spend on cooking and creating gourmet meals. Yet I want my food to taste good.

Do you have to sacrifice flavor if you are short on time? I say no! This blog here at DigitalMuscle.com gives me an amazing opportunity to share some of the simple, but delicious, recipes that I’ve created over the years.  As an IFBB bikini pro, I am almost always following a meal plan, but even when I’m off-season, I’m still eating mostly clean, with just a little more flexibility.

My recipes are usually based on basic ingredients like eggs, oatmeal, lean protein and fresh vegetables. The secret to making those basics taste good is the seasoning.

You can make the most elementary foods taste am-a-a-a-zing if you have a full set of tools in your belt and you use them—fresh garlic, cilantro, turmeric, curry, lemon, lime, ground cinnamon, and so many more! See how many ways you can create a smorgasbord of flavors in your healthy meals.

The idea of making a pizza omelet popped into my head one night as I was cooking my egg whites and watching my three kids eat pizza (yes, my kids eat pizza sometimes). I smelled the garlic and seasonings and the baking crust, and I wanted some! Then I had an epiphany—what if I created an egg white pizza? Yes, I know it’s not exactly the same, but close, right?

Pizza Omelet

1 cup egg whites

1 tablespoon chopped green chilies

1 ounce part-skim mozzarella, shredded

2 tablespoons organic tomato sauce

1 teaspoon Italian seasoning blend

1/2 teaspoon minced fresh garlic

Nonstick spray

 

Coat a skillet with nonstick spray, and heat it on a medium-high burner. Add the minced garlic, and brown lightly. Pour the egg whites into the skillet, and cook as you would a regular omelet.

Remove the omelet to a serving dish, and spread the tomato sauce over it. Sprinkle with the cheese and green chilies. Finish with a dash of Italian seasoning, and voilà! You’ve got a pizza omelet loaded with flavor, lean protein, and zesty seasoning—but much lighter than a traditional slice.

This recipe is extremely versatile—you can vary it however you like your pizza! Some suggestions:

Italian Veggie Style: spinach and sun-dried tomatoes with Italian seasoning

BBQ chicken Style: sugar-free BBQ sauce and sliced red onions

Asian Style: matchstick carrots and red bell pepper, fresh cilantro and drizzle with Bragg Liquid Aminos All Purpose Seasoning
