Fit Recipe: Oatmeal Pumpkin Bread

PUMPKIN season is here!!! Who else is excited?! Not only is pumpkin the tell-tale sign of fall. But it’s also extremely nutritious! (I’m referring here to actual pumpkin, not all of the imitation “pumpkin” flavored treats.)  What can pumpkin do for you?

  1. Boost vision
  2. Lower blood pressure
  3. Improve heart health
  4. Help you Sleep better
  5. Reduce risk of certain cancer

I think the question here now becomes, “have you had your serving of pumpkin today?” Well, if the answer here is “no,” and even if it’s yes, here is a perfect way to get that serving of pumpkin in today. Yet another glorious part of this recipe, it is SO EASY!

What you will need:

  • 2 cups old fashioned quick oats
  • 1 can pumpkin
  • 1/3 cup sugar free maple syrup (you can also use agave)
  • 1 tsp baking powder
  • 1 tsp pumpkin pie seasoning

Preheat oven to 350 degrees. Spray 9×5 loaf pan with nonstick cooking spray. Add all ingredients in blender until it is completely blended.  Pour mixture into loaf pan spreading evenly. Bake for 30 min.  Remove from heat and let cool.  That’s it!!! You are ready to enjoy reap the health benefits.  Try a slice with 1 tbsp. of almond butter for breakfast, or when prepping you can add in 1 scoop of protein powder for extra protein and flavor. (if you add protein reduce the bake time.)
