Fit Recipe: Luscious Coconut Brownies – High Protein!

Continuing with our popular Fit Recipe Series here at DigitalMuscle.com, our resident “Fit Chef” Robyn Maher shares this delicious high-protein recipe for those who love the decadence of coconut and chocolate! The picture says it all with these decadent-looking protein confections.

Coconut Protein Brownies

Wet ingredients

1/2 cup honey

1/4 cup coconut oil

4 ounces unsweetened applesauce

1 tablespoon vanilla extract

1/4 teaspoon almond extract

3 eggs (or 5-6 egg whites)

10-15 drops coconut-flavored liquid stevia

Dry ingredients

1/2 cup almond flour

1/2 cup Quest Nutrition Chocolate Milkshake protein powder

1/2 cup cocoa powder or raw cacao

3 packs Devotion Nutrition Flex Flavors Coconut Biscotti

1/2 teaspoon baking soda

1/4 teaspoon sea salt

 1/2 cup shredded or flaked coconut, divided

1/2 cup chocolate chips, divided

Walden Farms or other sugar-free chocolate syrup

Preheat the oven to 350 F. In a blender or mixer, add the honey, coconut oil, applesauce, vanilla, almond extract, and eggs. Process until smooth, and add the stevia drops.

In a separate bowl, combine the almond flour, protein powder, cocoa, Flex Flavors, baking soda, and sea salt. Mix well until the batter is smooth.

Spray an 8×8-inch baking dish with nonstick spray, and spread the batter evenly in the pan. Sprinkle 1/4 cup of shredded coconut and 1/4 cup of chocolate chips over the top, and stir gently into the batter with a spatula. Bake approximately 20 minutes, but do not overcook, as the brownies will be too dry.

Place the remaining 1/4 cup of coconut in an oven-proof dish and toast for 5 minutes. Sprinkle the coconut and the remaining chocolate chips over the brownies, and drizzle with sugar-free chocolate syrup. Cool completely on a wire rack before cutting.
