Do you know anyone who drinks real milk anymore? I’m not really sure that I do; its seems to be all about the nut milk these days. Not only is nut milk lower in calories than cow’s milk, but it also contains many vitamins and minerals naturally without being fortified. For example, almond milk contains 47% of your RDI of vitamin E, while cow’s milk does not contain any. This natural high content of vitamin E can also reduce the risk of heart disease and strengthen bones. Nut milk is dairy free, does not raise blood sugar, and, believe it or not, is easy to make at home!!
Here’s what you will need:
2 cups raw almonds
6 cups filtered water
Almond milk bag
Optional: maple and vanilla extract/ stevia/ sea saltFirst, you want to soak your almonds in water for 6-8 hrs. I usually just soak them the night before. Strain almonds and place in large blender (I use the ninja with the big attachment). Add water ( 3 cups water for every cup of almonds) and BLEND. You want to blend for a minimum 1 min. pour mixture into almond bag over bowl. Twist bag and squeeze out milk. Once all liquid is extracted, empty remaining almond flour into bowl. Set aside for later. You can be done here, or continue on. Now, I like to pour the nut milk back into the blender and blend with extracts, stevia, and a little sea salt. Pour milk into a mason jar and refrigerate.
With the remaining almond flour we are going to make pumpkin butter!
What you will need:
Leftover almond from milking (almond pulp)
½ cup pumpkin
Cinnamon and Stevia
3 tbsp. almond milk
Place almond pulp in food processor. Turn on for 2 min. Add in the remaining ingredients and blend until mixture becomes creamy (can take anywhere from 4-10 min).
