Robyn Maher
Our Fit Recipe series continues with this fall favorite from the kitchen of IFBB Bikini Celeb Robyn Maher. Try Robyn’s special twist on granola. A special treat for anyone who loves pumpkin as much as we do!!!
Dry Ingredients
3 cups old-fashioned oats
1 cup unsweetened coconut flakes
1 cup walnuts, chopped
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/4 cup ground flaxseed
1/2 teaspoon salt (optional)
1 tablespoon ground cinnamon
1/4 teaspoon ground ginger
1 teaspoon pumpkin pie spice
1/2 teaspoon nutmeg
Wet Ingredients
1/2 cup honey
2/3 cup avocado oil or coconut oil
1 teaspoon almond (or vanilla) extract
Preheat oven to 300º Fahrenheit.
Combine all the dry ingredients in a large mixing bowl, and set it aside.
In a small saucepan, bring the honey and oil to a boil. Remove the mixture from the heat, and add the almond extract. Add the wet mix to the dry mix, and incorporate well, stirring to coat the ingredients evenly.
Line a 12×18-inch baking sheet with parchment paper or aluminum foil, including the sides. Spread the granola evenly on the pan, and bake for 30 minutes, or until it reaches the desired crunchiness.
Remove the granola from the oven, and spread it on a dry surface until fully cooled. Store in an airtight container.
