Fit Recipe: A Healthy Buffalo Chicken Meal

In case ya’ll haven’t realized it yet, eating healthy and dieting can be super fun and delicious!!! Hopefully you’ve enjoyed some of my famous desert recipes we’ve been making these last few weeks! Today we are setting our sweet tooth aside for a moment and we’re making a super tasty lunch (or dinner).

Sweet potato “bread” slices

1 sweet potato sliced VERY thin (depending if you are having a low carb or high carb meal)

PRO TIP: I slice my sweet potato SUPER thin so it totals 1oz of potato for a low carb (5g) meal that is so satisfying!

1 tsp of Paptika, Chipotle, pink sea salt, pepper

Preheat oven to 425 degrees.. lay the sliced sweet potato flat on baking sheet.. spray sweet potato with olive oil cooking spray.. sprinkle seasoning over sweet potato. Bake for 20 minutes. Personally, I bake mine a tiny bit longer because I like them a little crunchy.

Buffalo chicken

1 chicken breast (or more if you want to make a large batch for later)

¼ cup Franks buffalo sauce

preheat oven to 400 degrees. Bake chicken breast (whole) for 20 min. Take it out. You may want to let it cool for a minute two. Slice the chicken breast thin. Pour franks sauce in long container. Dip sliced chicken breast in sauce, return to baking sheet. Bake for another 10 minutes.

Zuchini fries

4 zuchinis (you can slice them in chunks or lengthwise like French fries)

Olive oil spray

1 tsp garlic, no salt, pepper and paprika

Preheat oven to 425 degrees. Place sliced zucchini fries flat on baking sheet. Spray with olive oil spray. Sprinkle seasoning over zucchini. Bake for 45 minutes.

Now, you just have to put it all together!!! Take the sweet potato slices, lay one down, and place buffalo chicken on top. You can add some reduced fat swiss cheese, avocado, walden farms ranch dressing, whatever you like!!! Top with another sweet potato slice and add your fries on the side. You are all set!!! You now have a FABULOUS meal!! Enjoy!
