Fit Recipe: Cauliflower Mac n’ Cheese

Hey ya’ll!!! Today in the DigitalMuscle.com Bambody Kitchen we’re going to add a little twist to our popular Protein Mac and Cheese (I shared that recipe here a few weeks back). This Cauliflower Mac N’ Cheese is a SUPER low carb version that will have your taste buds screaming with excitement and your summer body on point.

What you will need:

8 cups riced cauliflower (you can find cauliflower already riced, or make it yourself by simply processing a head of cauliflower in a food processor)

1 can fat free cream of mushroom soup

1 cup low sodium chicken broth

1 cup fat free feta cheese

1 packet low sodium ranch dip mix

1 cup reduced fat parmesan cheese

1 cup fat free or reduced fat shredded cheese

TIP: for more protein use almond cheese

2 cup water

Preheat oven to 400 degrees. In a greased casserole dish, lay in a flat layer riced cauliflower. In a medium saucepan on low heat bring mushroom soup, water, chicken broth, and parmesan cheese to boil. As soon as sauce begins to boil add all of the remaining ingredients. Stir consistently until mixture becomes thick. Immediately pour sauce over top of the cauliflower rice. Pat down so that the mixture sinks into the cauliflower. You can sprinkle some more parmesan cheese on top for a little cheese crunch.

TIP: I like to top the mac and cheese off with extra lean turkey and a little taco seasoning.

Bake in oven for 25 min. Remove from oven and let cool for 5-10 min before serving.

Voila!!! Now you have a freakin’ delicious SUPER low carb hearty meal! This meal gives you so much volume, and so little calories it’s a perfect dish to fill you up and keep your diet on track. Hope you enjoy! Until next time!!!
